White Chocolate & Cranberry Cookies

I seem to make these biscuits (cookies to you US readers) when I'm feeling sad or a little depressed. This batch Miss 4 and I made when we heard about the Connecticut shootings and were feeling shocked, violated, sick and upset.

200g butter, softened
1 cup packed brown sugar
1/2 cup condensed milk
1 egg
1 1/2 tsp vanilla essence
1 1/2 cups plain flour
1/2 tsp baking soda
2 cups of rolled oats
1 1/4 cups of dried cranberries
1 cup of White choc bits

1. Preheat oven to 180C (350F)
2. Cream butter, brown sugar & condensed milk. Add egg, vanilla essence and beat until mixture is light and fluffy.
3. Sift flour & baking soda into the mixture. Stir in rolled oats, cranberries and choc bits. Place heaped tablespoons of the mixture onto a greased oven tray.

4. Bake in preheated oven for 15 minutes or until lightly browned.
I like my biscuits soft, so always cut a couple of minutes off the baking time for each batch.

Makes 35-40.

And the best part about making bikkies?

Raw batter.......mmmmmmmmmmm.
Plus, they have dried fruit and oats in them, so that means they're healthy, right?!

  1. These look divine! I'll give them a try the next time I'm feeling despondent.

  2. These look so, so marvelously yummy! Cranberries and white chocolate chips go together so beautifully. Thank you for sharing your special cookie recipe with us.

  3. Send some up with Miss 11 please!
