White Chocolate & Cranberry Cookies

I seem to make these biscuits (cookies to you US readers) when I'm feeling sad or a little depressed. This batch Miss 4 and I made when we heard about the Connecticut shootings and were feeling shocked, violated, sick and upset.

Ingredients:

200g butter, softened
1 cup packed brown sugar
1/2 cup condensed milk
1 egg
1 1/2 tsp vanilla essence
1 1/2 cups plain flour
1/2 tsp baking soda
2 cups of rolled oats
1 1/4 cups of dried cranberries
1 cup of White choc bits


1. Preheat oven to 180C (350F)
2. Cream butter, brown sugar & condensed milk. Add egg, vanilla essence and beat until mixture is light and fluffy.
3. Sift flour & baking soda into the mixture. Stir in rolled oats, cranberries and choc bits. Place heaped tablespoons of the mixture onto a greased oven tray.


4. Bake in preheated oven for 15 minutes or until lightly browned.
I like my biscuits soft, so always cut a couple of minutes off the baking time for each batch.

Makes 35-40.


And the best part about making bikkies?

 
Raw batter.......mmmmmmmmmmm.
Plus, they have dried fruit and oats in them, so that means they're healthy, right?!
